For years, Jane Bennett resisted her father’s requests for her to set up his dream of a cheese factory on the family farm. Jane knew she’d have to give in eventually, and went off to college and then to England to study the art and science of making good cheese. Brothers Michael and John Bennett’s family had been farming in Tassie since 1908. Alarmed at the decline of the dairy industry they decided to value add to their product and go into the cheese business.

When Jane returned home to Tasmania in the 90’s she set up the factory with all the second hand equipment her dad had been collecting over the years, and the now-renowned Ashgrove Cheese was underway.

Vintage Cheddar

A classic English style of cheese. Th black wax has a distinctive acidity to it more resembling a Lancashire style rather than the the traditional buttery cheddars. Interesting that Jane’s first cheese made in Tassie was a Lancashire.
