Pecorino is a semi hard to hard style sheep’s milk cheese. Sardo, meaning from Sardinia. The cheese has a sharp piquant flavor with some acidity. Its hard texture makes it ideal for grating or shaving. Due to its heritage it typically finds its use closely aligned with pasta. The sheep’s milk gives the cheese a whitish turbid colour that will darken with maturity. Pecorino can be purchased as a fresh softer cheese that has a higher moisture content, but the majority of this cheese is found in the aged category.
